I worked it out how to change the colour of the menu.

Highlight your hamburger menu
click on class manager at bottom of list
create new subclass
toggle menu navigation symbol
which appears as:
navbar-toggle .icon-bar
click on this to change the colour elements of background and colour of hamburger.
