Structured data should be used on every site now. Although it comes down to how much the client wants to spend.

Yes I use schema on all of my sites and have done for a few years now. It does make a difference, not huge but certainly brings in more targeted traffic through googles rich snippets.
I use schema for breadcrumbs, company details, social media links, articles, products, reviews, recipes, videos etc

The last time I checked you could do a certain amount through Google webmaster tools by highlighting page elements, though this may have changed with the new version. The big caveat is that it only worked with Google, so I’ve tended to add code in the page footer but it’s rather fiddly.
There was a good Rapidweaver stack for this and we need something similar for Blocs, but nothing is out there right now. Structured data has so many options that it can become very complex and not always obvious which categories should be used, plus different types then entail various stipulations.
