It’s a creepy app why the color of unselected text changes or disappears.
I think what is happening here is that you have items with the same heading tags within a single bloc. For example, H1. Typically, you would only ever have a single H1 tag on any page. Other tags can be used elsewhere, such as H2 - H6. This means that if you change the colour of one H1 tag, you will change the colour of all H1 tags.
Although Blocs conveniently sets up a set of styling parameters for your tags, the tags themselves (unlike word processing applications) are not styling parameters. They are simply there to tell search engines the importance of certain information on your page. H1 is the most important tag, with H2 through p being progressively less important in the hierarchy. As a consequence, you could, if you wanted, have an H1 text item styled as a paragraph if it represented the most important information on your page. To do this you would select your H1 item, and then change the styling parameters that reduced the size of your font, maybe justification, font style and colour. However, you would do this through a custom class, rather than trying to change the built-in styling set up for H1 tags.
If you intend to have multiple tags, but different styles, you should create a custom class for each text item. You would then use the custom class to change the styling options. This will ensure that no other item with the same tag gets changed - the custom class is simply assigned to the text item or tag you’re editing.
In your case, I can understand what you’re trying to achieve because you have a dual language site. Therefore, you want two HI tags - one in English and the other in (what I assume to be Japanese), but you want them in different colours. Therefore, the best approach is to create your two H1 text boxes on the page. Then click on the English version and create a custom class named something like h1-english. Open the class editor and change the styling options as you want them to appear. Then select the Japanese version and create a custom class named something like h1-japanese. Again, open that class in the class manager and change your styling options there.
Having created your styling options, you can use them throughout your site, regardless of the heading tags you may have assigned to each piece of text. Just remember, Tags are hierarchal elements of a web page, classes are styling options. The fact that blocs has a set of styling options set for each hierarchal element (see them in the site properties dialogue) it doesn’t mean you have to use those styling options - they can be overridden with custom classes. Below is an illustration:

If you make an error on a custom class, you can simply delete it with the small x next to the class name.

Once you have a custom class set up, you can change it’s settings for each breakpoint. Just go to the breakpoint you’re working on and click the custom class name to open it in the class editor. Make your changes and then move to the next breakpoint. Continue doing this until everything has been set for every breakpoint.
Finally, don’t trust to luck when it comes to using styling options. If you have two headings within the same bloc, be sure to add two custom classes to style each of them independently. This way, you prevent inadvertent changes happening if you add more headings later in the design process.
