As Blocs supports WebP I don’t see why not.

Yes it should be fine and will work for the vast majority of site visitors with the exception of Safari users on Mojave or earlier.
This assumes you have Blocs 5 and Sonoma or Ventura. I don’t think earlier OS versions supported WebP in the asset manager.
Another option is to convert the WebP to Jpg, though too many conversions will mess up the quality.
The docs are not necessarily an accurate reflection of current functionality and need a bit of attention in places. I experimented with a wild concept and actually tried it. For me it works. Perhaps @AlexT can also try.
