As I understand it Volt saves the content as text. files. Where are those files located. I would like to back them up outside of backing up the whole website,

They are stored on the sever inside the text subfolder of _cms. They are automatically backed up inside the backup folder as changes are made. Needless to say @Jannis is the expert for all Volt related questions.
